Ingredients:

You can’t go wrong if you choose these cheddar scalloped potatoes for a
family meal, potluck dinner, or holiday feast. Briefly cooking the
potatoes before baking means less time in the oven and ensures tender,
delicious results.

  • 4 oz parmesan cheese, shredded
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 12 large eggs, hardboiled and sliced in half
  • 2 tablespoons mayo (I like to use the one made with olive oil)
  • 1 tablespoon dijon mustard
  • 1 tablespoon relish
  • 1 teaspoon white vinegar
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon smoked paprika (plus more for garnish)
  • salt & pepper, to taste
  • chives, minced – for garnish

A combination of milk and heavy cream makes for a rich sauce. Ham or
bacon can be added to the potato mixture, or use a different cheese or
blend of cheeses. For light garlic flavor, rub a cut clove of garlic
over the baking dish before you butter it.

原料:

Use red-skinned potatoes or another low starch potato. Round whites, new
potatoes, and Yukon Gold are good choices as well.

  • 约110克帕马森干酪丝
  • 1/2 茶匙盐
  • 1/2 茶匙鲜磨黑胡椒
  • 12 只煮熟的鸡蛋, 切半
  • 2 汤匙蛋黄酱
  • 1 汤匙第戎芥茉酱 (站长觉得用超市里买得到的美式黄芥末也可以呀)
  • 1 汤匙腌黄瓜酱
    (增加蔬菜的新鲜口感,大家可以换成碎番茄或者切碎的小黄瓜)
  • 1 茶匙白醋
  • 1 茶匙伍斯特郡辣酱油
    (一种英式传统味道酸甜微辣,褐色的调料,广州那边有也叫喼汁的,大家没有也可以用味极鲜)
  • 1 茶匙辣椒粉
  • 盐和胡椒,随口味
  • 切碎的小香葱,装饰用
  • Directions:

    Preheat oven to 400°F. Line a large baking sheet with a silicone
    baking mat or parchment paper. Set aside.

    In a small bowl, toss together parmesan cheese, salt and pepper.
    Place 1 tablespoon of cheese on baking sheet and pat down into a
    flat layer.Repeat with the remaining cheese, spacing the cheese
    about a 1/2 inch apart.

    Bake for 6 minutes – until golden (the centers might not be golden,
    but the edges will be). Remove from oven and let cool on baking
    sheet for 10 minutes. They will crisp up once cool.

    In a small bowl, mash your egg yolks. Stir in the mayo, mustard,
    dijon, relish, white vinegar, worcestershire sauce, smoked paprika,
    salt, & pepper.

    做法:

    烤箱预热200°C。烤盘上铺好大张的烘焙纸。

    在一个小碗里,混合好干酪丝,盐和胡椒。把一汤匙干酪混合物在烘焙纸上压平成圆形。每个干酪片之间留至少1.5厘米的距离。

    烤箱烘六分钟直至干酪片变得金黄
    (中间可能不是金色的,但是边缘是的哟).
    把烤盘拿出来,晾凉10分钟。干酪片凉下来就脆脆的啦!

    在一个小碗里, 取出煮鸡蛋的蛋黄, 把蛋黄酱,
    芥末酱,腌黄瓜酱,白醋,辣酱油,辣椒粉,盐和胡椒搅匀混合。

    把搅匀的蛋黄填回蛋白里,撒上辣椒粉和小香葱做装饰。最后在蛋上面放上干酪脆片,可以吃啦!
